Proper Yorkshire Oatcakes
Oatcakes are a slightly-leavened bread that you can cook in a pan without a quarter of the effort that goes into baking proper bread.

  1. Mix the flour, oatmeal and salt.
  2. Mix the milk and water and then warm in the microwave for 40 seconds or so. Don’t let it get hot!
  3. Mix in with the dry ingredients and the yeast to form a smooth batter. Set aside in a warm place for half an hour or so.
  4. Stir it again and stick a sturdy, well greased frying pan over a medium heat. Pour a thin layer of batter over the pan and cook until the bottom’s browned and the top layer no longer looks wet, then (carefully!) flip it.
  5. Serve warm and buttered, or store in a bread bin.
