I love leftovers. You’ve already done the hard work, and right there in your fridge is something delicious just waiting to be made even more delicious. Leftovers are an opportunity to try something a bit different and creative, and perhaps to wing it instead of sticking to a recipe. They also lend themselves well to four of my favourite things – sandwiches, pies, hashes and salads.

Using up leftovers is also, I think, well in the spirit of Yorkshire cookery. A Sunday roast can see you through several extra lunches and teas if you put it to good use. Similarly pies and hashes are, as noted above, ideal homes for your spare odds and sods (you could put all sorts into a Knaresborough Picnic Pie, for example). This Yorkshire Meatloaf Butty is perhaps even more delicious than its parent dish thanks to a bit of refrying.

This leftover parkin ice cream sandwich (as you no doubt guessed) is of the sandwich variety, albeit not in a traditional sense. Yes, the ice cream sandwich feels like an American dish (though they have been around here for a while) but parkin and ice cream are two foodstuffs we’re very at home with here in Yorkshire.

I’ve included slices of apple to add a bit of crunch, but you could improvise with orange or even a bit of fig if you have either lying around.

Finally, it’s definitely worth baking a parkin just so you can make this ice cream sandwich. Handily, Yorkshire Grub has a chili parkin recipe just lying around…

Instructions
  1. Take a mixing bowl and nestle it in a pan so that it sits a few centimetres above some gently simmering water. Put your chocolate in the bowl to melt.
  2. While it's melting, slice your parkin and apple. Layer your apple over the bottom slice of cake and, once the chocolate's melted, add your scoops of ice cream.
  3. Once the chocolate's melted, dip a brush in it and flick it into thin strands over your ice cream. Brush the top layer of parkin with the remainder, stick it on top of the ice cream, tuck in!
