Bonfire Toffee
A dark, jaw-breaking sweet to enjoy on a cold bonfire night. You might be surprised how easy this treacle toffee is to make!

  1. If your syrup or treacle comes in a can, put it in a pan of barely simmering water for a few minutes to make it easier to pour and measure.
  2. Add all your ingredients to a medium-sized pan and bring to the boil, stirring continuously to prevent burning. Reduce to a simmer, then cook for 15 – 20 minutes. To check whether it’s ready, drop a little into a cup of cold water. If it goes brittle, you’re good to go.
  3. Pour the mixture into a well-greased tin and leave to cool completely. Once it’s cool and hard to the touch, turn it out onto a chopping board and break with a (clean!) hammer or the handle of a big knife.
  4. Eat in front of a roaring bonfire, while fireworks explode in the sky above you.
